My search for bread


Since going gluten-free, many of my Saturdays are spent trying out bread recipes, in search for a bread that somehow resembles what I can no longer have.

So far, no joy.

I have tried this simple bread from Elana's Pantry, but it was really more like a nutty cake so, although tasty, not what I was looking for. Elana has since developed other bread recipes, including this one, which I will certainly be trying, but plans for more baking doesn't ease the disappointment of not having nice bread on a Sunday morning.

Yesterday, I made this bread, since I needed to use up some brown rice flour. It's decent, but too moist for me, wet really, and has a rice taste that just doesn't resemble bread. So it's a no, both on the texture and on the taste front.

I'll keep looking. Maybe one of these will be my bread salvation?

I've been sporadic about keeping up with blogs in the past few months (didn't help that I was away for most of August!), but I know you were having some food issues. I'm experimenting with diets right now to figure out what keeps making me sick and have cut out gluten, dairy, corn, and white sugar. I haven't found any amazing recipes yet (the gluten thing is newer), but if you let me know what you've cut out (just gluten?) I'll keep my eye out for you. I'm forever looking for delicious things to eat within my limited range.

I always try to eat things other than bread because anything that's trying to be and isn't, isn't likely to be as good!
This link is for a sugarless banana bread that's great toasted - and as there's no sugar or fat, it's healthy enough for breakfast!

Bob's Red Mill sells a gluten free garbanzo and fava flour which we put in our bread simply because it tastes good.

Shoot. Have you checked out the King Arthur Flour site. I have a GF friend who has found some good recipes there.

Erin - I've cut out gluten and most dairy - though I can have butter. Poor you, I don't know what I'd do without corn... or sugar! If you make anything that's really yummy, let me know!

eatinglikeahorse - I know, I know, I shouldn't try to substitute like that, but it's so easy to grab a piece of toast in the morning! Thanks for the link, that sounds great!

Nan - that sounds really good, but I can't get Bob's Red Mill products here in Belgium... I do have garbanzo flour though, maybe I'll search for a recipe that uses it.

I know my friend Ana buys her glutton-free bread in a Brussels market somewhere (Flagey?). Still, not the optimal solution for you, right?
